Visible fat separation in beef and game meat occurs naturally. This does not result from fat being added deliberately. Instead, the fat naturally present in the meat separates more during cooking than with other types of meat. Seasonality also plays an important role, particularly with game products. Depending on the season, game animals accumulate different amounts of body fat. Consequently, the fat content of the meat may vary slightly depending on the hunting period. Sometimes the meat is leaner and sometimes it contains slightly more fat – a completely natural variation that reflects the high quality and natural origin of our products.
